82. Just a Recipe (Salad).

Hi,
As odd as it may sound, sometimes I crave salads. Probably, my body knows when it is in need of simple/fresh foods, hence naturally making me crave for salads/vegetables/fruit. It’s actually strange that I can sometimes crave for really-really spicy Indian food for one meal and a not so spicy salad for the very next meal. Well, whatever be the reason, I thoroughly enjoy eating salads! 
 
Here is a simple recipe of ‘Cucumber-Tomato Salad’, I made today. 
 
You need:
1 Cucumber 
Cucumber-Tomato Salad.

1 Tomato

2/3 stalks of Parsley
1/2 cup of sweet corn
1/4 cup of sweet peas
2 Tablespoons of lemon
Feta Cheese crumbs (Substitute with any other cheese of your choice)
A pinch of salt
 
Method: 
1. Dice tomato and cucumber into small square cubes.
2. Finely chop parsley.
3. Boil/microwave sweet corn and sweet peas, until cooked.
4. Add salt and lemon juice to the mixture of chopped tomato, cumber, parsley, sweet corn and sweet peas and mix it with a spoon/fork.
5. Garnish the salad with crumbled feta cheese.
 
Tastes like:
It tasted like springinsh-summer to me! The soothing taste and soft texture of the salad is really refreshing and the sharp taste of feta cheese complements it. The lemon juice further enhances the freshness of all other ingredients. 
 
Note:
The vitamin C from lemon juice helps in absorption of the iron rich parsley.
