39. Banana Walnut Muffins.

I love to cook. I am neither good at cooking or baking, yet I L.O.V.E. to cook or just make something that looks good and is edible. Well, more than cooking I love to feed others, which gets complicated as most of my cooking is experimental and not everyone wants to be my guinea pig at the dining table. Blah blah apart, I made banana walnut muffins for the first time yesterday. I just followed a very simple recipe, which I am sharing below. Muffins are a good breakfast item or could be eaten as a snack. Please feel free to share any of your other muffin recipes or anything muffin related. 
 
Ingredients:
4 ripe bananas
1/3 cup melted butter
3/4 cup sugar (make it 1, if you want it sweeter)
1 egg, beaten
1 tsp. baking soda
1 tsp. pure vanilla extract
1/8 tsp. salt
1 1/2 cup all purpose flour
1 cup chopped walnuts
 
Method:
1. In a large mixing bowl, mix melted butter to mashed bananas. Mix in sugar, egg, vanilla extract, baking soda, salt. Add the flour, chopped walnuts and stir the mixture, until it is well incorporated. (Do not mix for too long so that the muffins remain fluffy when baked.)
 
2. Pour the muffin batter into muffin pan lined with cupcake cups.  
 
3. preheat the oven to 350 Fahrenheit. Bake the muffins at 350 F for about 25-30 minutes or until the muffins turn golden.4. Enjoy!
